Butterfly Beef Fillet with Puree

  • Medium Size Non-Stick Pan
  • Oven Friendly Non-Stick Pan

Instructions

The numbers below apply to two servings and to be multiplied according to the number of servings ordered.

Step 1
Prepare your puree

In a medium size pot, place your carrots and potatoes, cover them with water (make sure they’re well covered), then add a pinch of salt to the water. Let boil on medium heat for 25 minutes (till they become soft and you can easily insert a knife in their center).

 

 

 

 

 

 

Step 2:
Stuff your meat

 

Pre-heat the oven on 180°C for 10 minutes (you’ll need it in the coming steps).

Season your meat with salt and pepper then spread the cheese mixture on the butterflied fillet and roll as shown in the picture.

 

 

Step 3:
Cook your meat

Heat a non-stick pan on medium-high heat, then add 2 tablespoons of corn oil and let heat for 20-30 seconds then place your meat (don’t move for 30 seconds). Keep repeating the same process on the four sides of the fillet using a tong (till it gives you a nice brownish color).

 

 

 

 

 

Step 4:
Cook your meat (Continued)

 

Transfer to an oven friendly pan and place in the pre-heated oven for 5 minutes if you want your meat rare/7 minutes if you want it medium rare/10 minutes if you want it
medium/13 minutes if you want it medium well/15 minutes if you want it well done.

 

 

 

 

 

 

Step 5:
Prepare your puree

 

Meanwhile, the veggies should be well cooked by now. Transfer the carrots and potatoes to a medium size pot and use a masher to mash them really well.  Add Juhayna heavy cream, butter, parmesan cheese, salt and pepper to taste.

 

 

 

 

 

Step 6:
Assemble your dish

 

In a plate, place your puree and top it with the steak. Indulge your senses!
